Yellow Squash Spirals

Looking for a tasty side? Try these yellow squash swirls. They are light, and offer a nice texture, with just the right  amount of crunch. This is a terrific way to add more vegetables as a side dish.

We made them with an awesome sockeye salmon burger, with a plump diced garden tomato with sweet Walla Walla onion slices and fresh dill.

Yellow Squash Spirals

Ingredients

  • 1 yellow squash spiralized
  • 1 extra large carrot spiralized
  • 3 eggs
  • 3 teaspoons  gluten free flour

Directions

  1. Spiral slice the yellow squash and carrot.
  2. Beat the eggs and flour into a batter.
  3. Toss the yellow squash and carrots in the batter, making sure they are evenly coated.
  4. Heat a small amount of avocado oil (or your favorite oil) in a skillet over medium heat.
  5. With a fork, twirl a few of the vegetables into a ball, and cook in the skillet – approximately 3-4 min per side.
